Die Reben dieses Syrah wachsen am linken Ufer der Rhône auf Hängen, die nach Süden ausgerichtet und windgeschützt sind. Dort profitieren sie von einer idealen Sonneneinstrahlung und perfekten Reifebedinungen. Nach der selektiven Handlese werden die Reben zunächst kontrolliert bei 32°C in Betontanks vergoren und für 4-5 mazeriert. Danach erfolgt die Reifung für 18-20 Monate in bis zu 30% neuen Eichenholzfässern.     Für den Château de Haute-Serre Grand Vin Cahors kommen nur handverlesene Trauben infrage. Die Trauben werden bei stetig kontrollierter Temperatur gegoren und anschließend 10-12 Monate in französischen Barriques, von denen ein Drittel neue Barriques sind, ausgebaut. Dieses Vorgehen vereint die Rebsorten Malbec, Merlot und Tannat zu einem wahren Genuss. Dieser Meinung ist auch unser Geschäftsleiter Lars Kaniok: "Die faszinierende Rotweinsorte, die um die halbe Welt gereist ist, findet sich auch im Wein vom Château de Haute-Serre wieder. Das französische Cahors stellt mit diesem Grand Vin einen tintenfarbigen, würzig-komplexen Wein dar, der reif ist und nach schwarzen Kirschen duftet." Eine tiefdunkle Farbe mit kaminroten Reflexen im Glas und in der Nase Noten von Kirschen und Johannisbeeren vereint mit dezenter Würze. Am Gaumen wird die Fruchtigkeit weiter aufgegriffen und mit einer passenden Frische ergänzt, bis der Tropfen in einem seidig-langem Finish endet. Dies macht ihn zu einem hervorragenden Begleiter zu kräftigen Fleischgerichten, wie z.B. Ente, Gegrilltem aber auch französischem Käse und dunkler Schokolade.   Das findet auch unsere Lieblings-Bloggerin Astrid Paul und zaubert dazu geschmorte Entenkeule mit Hokkaido-Kürbis und Kräuterseitlingen: Im Wein-Magazin Wine Enthusiast ist der Wein übrigens mit 92 Punkten ebenso positiv aufgefallen. Folgendes schreibt Roger Voss, Wine Enthusiast-Autor für Frankreich: »Full of black fruits, this wine has structure, density and concentration. At the same time, it shows restraint and even elegance, giving a poised statement of Malbec. Juicy acidity at the end adds freshness. Drink the wine from 2020.« Somit können wir den Wein bestens für den Genuss zu leckeren Gerichten, wie dem von Astrid Paul empfehlen – gleich selbst probieren!

Medium-bodied and with a very firm structure of wonderfully ripe, pixelated tannins and exhilarating freshness, it finishes long with notes of pebbles and floral perfume." Wine Spectator: 90-93/100 Punkte "Crunchy plum and black currant notes are fresh and focused, while chalk, iron and savory details line the finish. Shows nice purity and minerally drive." James Suckling: 95/100 Punkte "Tight and compacted with chewy tannins and showing hot-stone, blackberry and blueberry character. Full body and a driven finish." Vinous (Neal Martin): 89-91/100 Punkte "The 2017 Clerc Milon was picked from 13 to 29 September and matured in 50% new oak (which was represented in the blend tasted.) It has a more closed, backward bouquet compared to the sample of d'Armailhac. It actually reminds me of that other "Milon", Duhart-Milon in style. The palate is medium-bodied with grainy tannin, a fine bead of acidity, quite austere and conservative with a precise, pencil-lead, Valrhona chocolate and smoke infused finish that just pulls up a little short at the moment.
